Lunch on a budget.
How many of you eat out for lunch every day or just about every day? It’s ok to be honest with yourself…no judgment. I used to be that person.
Salads every day for lunch can be boring, but when you make them at home, they are super inexpensive.
This week’s salad is inspired by the salad I had during a working dinner on Saturday with fellow coach, Jen. I like to think of it as a southwest chicken salad.
Here’s the list of ingredients and the cost I paid yesterday:
-Salad (Mixed greens): $5.00 (big container)
-container of grape tomatoes: $2.99
-Carving board chicken: $2.50
-Can of crisp yellow corn: $1.69
-Can of low sodium black beans: $1.00
And actually it becomes less than that, since some of the corn and black beans were also used on the taco boats we had for dinner last night.
Also, how many different ways can you make a salad with things you already have in your pantry or fridge? Being creative, can also save more money!
Look at this: less than $3.00 per lunch!
